Happy 2011!

I thought I'd start my blog with a disclaimer: I am not an expert on nutrition, celiac, autoimmune diseases or gluten consumption. I'm certainly not an expert on blogging. The reason I'm doing this is simple: when I was diagnosed (and misdiagnosed) and then diagnosed again (more on that later) with celiac disease I felt alone and bummed out. I understood that people diagnosed with gluten intolerance were on the rise so I knew this could be a way toward feeling better. Yet, I didn't feel better. I had none of the euphoria or state of well-being that others did. In fact, I kind of felt worse. It was only until I gave up all dairy, soy AND gluten that I started feeling marginally better. But certainly not “fixed.” 
 

I look at this as a beginning of a long journey that will be worth it in the end. During the end of her life I saw my grandmother, Peg, suffer with symptoms now attributable to gluten intolerance/celiac. She was told to eat more fiber and whole grains – this blog is for her.
